Aggravation~~

Did anyone ever play the game aggrivation growing up? Some friends of ours got us playing a wooden version of it. It was similar to this only the board was square and you use cards instead of dice. The object of the game is to get your marbles around the board and back to your "home". Anyway, our friends moved away, and I have been wanting to play it again. It is a fun game. You can buy it online, but they can get REALLY expensive!! Heck... on Amazon.com someplace wanted $300 dollars for one!! SO~~If ANYONE knows where I can get the instructions to make one, PLEASE let me know. THANKS! :)

Birthday, wrestling & football!

Wow! Yesterday was a fun filled day! It was Quinn's 33rd birthday. We got up at 4 am and Quinn made breakfast.... Yes he made breakfast on his birthday... I know I am a loser. BUT hey I was trying to get myself and the kids ready to head out the door. We all sat down for a quick breakfast and sent Levi out the door at 5 am to the middle school so he could catch the bus to Cottonwood for the wrestling tournament. We left shortly after at about 5:30. We passed up the bus just outside of Holbrook. Then made a stop at Walmart in Flagstaff. Killed a little bit of time in there and then headed to Cottonwood. Boy was it packed in there. It was hard to find a seat and get comfortable. There were people and the wrestlers bags everywhere. So I don't have ANY pictures of Levi there. We do have video from all his matches though. It was a double elmination tournament. He Pinned his first guy. Then lost the second match. Then on the 3rd match, he had to wrestle someone from his own team!..... :( Trent Sherwood. It was a close match and both boys did fantastic. Levi won by ONE point! By this time I think it was after 1pm. Quinn and I grabbed the girls and ran for a QUICK bite to eat at McDonalds. Then we ran back to watch Levi wrestle his 4th match, where he lost. :( But he did a fantastic job and made it further this year than he did last year! He has improved so much and fights hard. We are very PrOuD of him!

When he lost we ran out the door and headed down to Phoenix to watch the St. Johns High School play off game. It was a close and fun game. We won and will play next weekend in Flagstaff. GO REDSKINS!!

After the game we made a few stops at Borders and Barns and Noble. Then made our way home with a stop at Arby's in Fountain Hill's. We got in at 12:30 am!

It was a whirlwind day of sports and fun. I hope that Quinn had a great birthday. He is the best husband. I am very lucky! Love you Quinn!!!

Southwestern Egg Rolls

Ok this is for Jen. It sounds complicated, but is really very easy. I love it! Oh and Jen~ I can't remember what other recipe you wanted. ?? Let me know and I will post it. :)
Southwestern Egg Rolls


1 or 2 chicken breast fillets (depending on size)
1 Tbs. vegetable oil
2 Tbs. minced red bell pepper
2 Tbs. minced green onion
1/3 C. frozen corn
1/4 C. canned black beans, rinsed and drained
2 Tbs. frozen spinach, thawed and drained
2 Tbs. diced, canned jalapeno peppers
1/2 Tbs. minced fresh parsley
1/2 tsp. cumin
1/2 tsp chili powder
1/4 tsp. salt dash cayenne pepper
3/4 C. shredded Monterey Jack cheese
five 7-inch flour tortillas

Boil Chicken and Shred. Preheat 1 tablespoon of vegetable oil in a medium-size skillet over medium-high heat. Add red pepper and onion to pan and sauté for a couple minutes until tender. Add Chicken to pan. Add corn, black beans, spinach, jalapeno peppers, parsley, cumin, chili powder, salt, and cayenne pepper to pan. Cook for another 4 minutes; stir well so that spinach separates and is incorporated into mixture. Remove pan from heat and add cheese; stir until cheese is melted. Wrap tortillas in a moist cloth and microwave on high temperature for 1 1/2 minutes or until hot. Spoon approximately one-fifth of mixture into center of a tortilla. Fold in ends and then roll tortilla over mixture. Roll tortilla very tight, then pierce with a toothpick to hold together. Repeat with remaining ingredients until you have five eggrolls. Arrange eggrolls on a plate, cover plate with plastic wrap and freeze for at least 4 hours or overnight.

While eggrolls freeze prepare avocado-ranch dipping sauce by combining all of ingredients in a small bowl. Preheat 4-6 cups of oil to 375º. Deep fry eggrolls in hot oil and remove to paper towels or a rack to drain for about 2 minutes. Slice each eggroll diagonally lengthwise and arrange on a plate around a small bowl of dipping sauce.

Serve with guacamole and ranch. Or this wonderful dressing below.

AVOCADO DRESSING:
1 lg. ripe avocado, peeled, mashed
1/2 c. sour cream
1/4 c. milk
1/4 c. mayonnaise
1 tbsp. lemon juice
1/8 to 1/4 tsp. garlic salt
2 to 3 drops hot pepper sauce
Salt and pepper to taste

In small bowl combine all dressing ingredients. Beat at low speed until smooth. Cover and refrigerate several hours to blend flavors.

Creamy Pumpkin Pie

So with Thanksgiving coming up, Kellie Platt had the great idea to swap pie recipes. So here is mine....

Creamy Pumpkin Pie



1 Cup canned pumpkin
½ Cup cold milk
1 5¼ oz. Pkg. vanilla instant pudding
1t. Pumpkin pie spice
2½ cups cool whip-thawed

1 graham cracker piecrust

Combine pumpkin, milk, pudding, & pumpkin pie spice in small bowl. Beat at lowest speed of mixer until well blended, about 1 minute. Fold in 2-½ cups cool whip (I use 3 ½ cups). Spoon into crust. Freeze until firm. About 4 hours. Top with remaining cool whip.... Or just plop a spoonful on top of each piece of pie.

This is my FAVORITE Pie at Thanksgiving. I of course offered to make it for our get together this year. I haven't had it in forever! I can't wait.

Enjoying the good things in life~

With all that is going on in the world... like the protesters at the TeMpLe in California and the tragedy our little community is going through, I am trying to look for the few things that are still good in this world. I have the BeSt kids, husband, extended family & friends. I am greatful to be a part of this wonderful community who pulls together in tough times. I am looking forward to the holidays. So with that I am starting to play my ChRiStMaS music a little earlier. I honestly believe that one month is not long enough to play Christmas music. There are some great songs about Christ that are only played at Christmastime and I LoVe them. So I am playing them on my blog. I hope you enjoy!

Eeeek!

About a week ago, Quinn woke up and said that something stunk in the kitchen! I could NOT smell anything. Anyway... He had it pin pointed to the stove area and then as he left for church, he asked me to find the source. I looked all over.... I lifted up the top of the stove, looked inside the oven and looked in the bottom drawer, but I couldn't find anything!! So the kids and I went to church. After we got home Quinn said he could STILL smell it!! So he looked in all the places I did and then pulled out the stove. Still nothing! Then he took the side of the stove off and low and behold was the source of the stink...... a dead MOUSE! It had been electrocuted! Sorry no picture of the dead mouse.
